The rail biting is the opposite of the rail popping like a cork because is too thick. If you put too much pressure in a thin rail it'll give in. 

yes, you are exactly right. Too much pressure in the tail of your board on a bottom turn and you will lose it.

The technique is the same regardless of the size of the wave.  It would be nice to have a video of yourself doing a cutback so we can better indicate to you what to do.

That is correct Allison, The mat does not represent the length of the board.

Hey Jackson, It means don't start your paddle from the surface but rather push a little under and then paddle.
